| FRIED OYSTER FRITTERS |
| 1 pint oysters
1 egg 1/2 tsp. baking soda 1/2 tsp. salt Dash of pepper 1/3 cup oyster juice 2/3 cup flour |
| Mix all ingredients except flour. Then gradually add flour until oysters stick together. Use a 1/2 cup measure to dip out
fritters into frying pan. Fry slowly in 1" or more of hot oil until crispy and brown. |

| CLAW CAKES |
| 1 can Claw Crabmeat
1 egg 1 tsp. baking powder 1/3 cup flour |
| Mix together all ingredients; using just enough flour to hold mixture together. Spoon
a heaping tablespoon into frying pan with hot oil. Flatten the mixture, using the back of the spoon, to make the claw cake thin and crispy. Fry on both sides. |

| HOT CRAB DIP |
| 1 lb. crabmeat
1 8oz. pkg. cream cheese 6 oz. grated swiss cheese 1/2 cup light cream 1/4 cup sherry salt and pepper |
| Combine; then cook all ingredients in a double-boiler until smooth and creamy. Pour into a baking dish or individual ramekins and bake at 350* for 20-30 minutes until bubbly.
Serve with toasted bread or crackers. |
